What's for Lunch? Fried Rice
Here is a favorite lunch time recipe. It works great with leftovers -- rice, meat, scrambled eggs.
Ingredients
In true Chinese cooking style I don't have exact measurements. Just use the amounts that you have.
1 small onion chopped
2 carrots chopped
leftover cooked rice (white or brown)
cooked meat - chicken or ham - if you want
eggs - if you want
frozen peas - gives it some color
frozen corn - if you like
Stir-fry the onion and carrots in a bit of oil until the carrots are tender, add the rice and meat. Cook until that is hot. Add the sauce. Add the eggs*. Add peas and corn and cook until hot.
Sauce
2T soy sauce
splash of fish sauce (if you don't have it don't worry)
1 tsp sugar
garlic - in our family the rule is the more the better
*eggs - you can add the beaten eggs to the rice and cook until it is done. I prefer my eggs firm so I cook them in a separate pan and then add to the rice. Sometimes I use the leftover scrambled eggs from breakfast.
Sometimes I freeze cooked rice that is leftover and get that out and use it.
We put the fried rice in our rice bowls and use chopsticks.
