This is a recipe from my childhood. I remember my mom pulling out the hardback
Mennonite Community Cookbook full of notes and some cooking stains. My mom would make these with leftover mashed potatoes. Now I do the same thing when we have leftover mashed potatoes. I love finding a way to use up the leftover mashed potatoes.

2 cups leftover mashed potatoes
1 large egg
1 tablespoon flour
2 tablespoons cream
1 tablespoon minced onion, if desired
4 tablespoons fat
Mix ingredients and shape into flat cakes or drop from a spoon into hot fat.
Fry a golden brown on both sides.
